How to extract without the Extract feature

Every
image is different, so you might need to use different techniques
on even a single image. Here is a few pointers for you:

Make sure
you are working on a duplicate and not on the
Background.
If your images seems locked: Double click on
the background layer... you'll get a dialog box... simply click
OK. Voilà, your background is now a layer.
Select and Delete
the excessive parts with
the Lasso Tool

Option 1:
Use the Magic Wand
or the Magic Eraser
for easy selections.

Option
2:
Use the Background Eraser for
for similar colors.
You will have to change the tolerance level
to fit your image. By changing the Sampling
mode to "once" the
eraser will capture the color on your initial click... move
toward the extraction area.
